Ouef en meurette is a traditionnel and very typical dish from Burgundy, made of poached eggs placed in a wine-based meurette sauce. The sauce is made of bacon, onions and shallots fried in butter before adding red wine from Burgundy. The dish is served with a slice of toasted country bread.
