“Corte Manara” from Azienda Agricola Manara is an Amarone Classico made from 70% Corvina, 20% Rondinella and 10% other varietals. The grapes grow on the hills of the Valpolicella Classico district, more precisely in Negrar, Marano and San Pietro in Cariano. The drying process of the grapes takes about 3 months. The grapes are then easily crushed and are let to ferment slowly in steel tanks for 40-60 days. The wine is then aged for 24 months in Slovenian oak barrels and then continues in steel tanks. The finalized wine is bottled and stored for another 6 to 12 months.
