“Le Morete” from Azienda Agricola Manara is a Valpolicella Classico Superiore Ripasso made from 70% Corvina, 20% Rondinella and 10% other varietals. The grapes grow on a hill in the Valpolicella Classico district called “Le Morete”. The grapes are lightly crushed immediately after the harvest and the fermentation takes place in steel tanks. The wine is then mixed with the lees from the Amarone and Recioto wines. The final wine is aged for 12 months in French and Slovenian oak barrels before being bottled and stored for another 6 months.
