Ca’ Viola – Barolo Sottocastello di Novello is an exclusive Barolo from the municipality of Novello. The wine is made from 100% Nebbiolo grapes, which are grown over almost 2 hectares of land, located 450 meters above sea level. The grapes are harvested at the beginning of October and are then let to ferment for 15-20 days in cement tanks. The malolactic fermentation that follows lasts for 15-30 days. The wine is then stored in large oak barrels for 2 years and another 1 year in cement tanks. 6,000 bottles are produced per year.
