La Réserve from Camille Cayran is made from 65% Grenache blanc, 20% Clairette, 15% Roussane as well as from Marsanne and Bourboulenc. The grapes are harvested by hand early in the morning and are culled directly by the harvester. The grapes are then pressed directly to preserve as much as possible of flavors, fruit and finesse. The juice is then coolclarified at 4-6 ° C (débourbage). The fermentation is done at low temperature (16-18 ° C) to thus develop secondary aromas. The wine is stored on its lees which adds roundness and volume to the final wine.
