Cascina delle Rose – Barbaresco – 3 Stelle – Red wine is made from 100% Nebbiolo grapes grown in the best south/southwest direction, 250 to 310m above sea level. The soil is blue marl with lean, calcareous and compact. Barbaresco Tre Stelle is grown over four small parcels of land within the Cru “Tre Stelle”. Harvesting is done by hand. The press is done mechanically, which enables a gentle process, that pushes out the stems, but does not crush the grape seeds. The alcoholic and malolactic fermentations take place in steel tanks. The fermentation is done with the skins and lasts differently depending on the vintage, usually around 30-35 days. The wine is then decanted into large oak barrels, where it is stored for approximately 20-22 months.
Bottling follows, always during the waning moon phase. No filtration or clarification, to maintain the structure of the wine.
