Castello Gabriel’s Prosecco – 1503 Mirage is made from 100% Glera grapes. The harvest is made manually with grapes with ideal ripening. The grapes are crushed and pressed. The must is cooled followed by static sedimentation and mixing with selected yeast. The fermentation takes place at a controlled low temperature (14 ° C). The wine is easily clarified and filtered. It is then poured into closed steel tanks (autoclaves) for the second fermentation. The wine ferments for a month when the pressure in the containers achieve about 5 bar. The final wine is clarified and filtered once more before being bottled.
