St. Joseph Cuvée Septentrio is made from 100% Syrah grapes, harvested manually at controlled perfect ripeness. The grapes are put in baskets and are then immediately transferred to the wine cellar. The grapes are let to macerate for 3-4 weeks before the fermentation starts at 30/32 °C temperature. The malolactic fermentation then follows and the finished wine is transferred into stealcovered concrete tanks and is stored there over the winter. The wine clarifies naturally during this time. After a few months, the wine is passed over into oak barrels for further storage.
