Ceretto – Barbaresco – Red wine is made from 100% Nebbiolo grapes grown on the youngest vines in Asili, as well as in the lower part of Treiso. A total of 5 hectares of land is cultivated according to organic farming. The grapes are harvested manually at optimal maturity. The grapes are then taken directly to the wine cellar where they ferment with natural yeast in stainless steel tanks at a controlled temperature for approximately 15 days. The grapes macerate for a further 10 to 15 days before being transferred to French oak barrels where they are aged for 12 months and then into 25 hl barrels where they are aged for another 12 months.
