Château Aydie – Maydie – Dessert wine is made from 100% Tannat grapes, grown in Saint-Lanne, Aydie and in Moncaup. The grapes are harvested by hand when they become overripe. The grapes are first cool macerated for a few days in oak barrels to extract as much color and flavors as possible. The grapes are then mixed with distilled alcohol and may macerate for further 3 weeks. The dessert wine is stored for 2 years in oak barrels before being bottled.
