Château Caronne Sainte Gemme is a Haut-Médoc made from 65% Cabernet Sauvignon, 30% Merlot and 5% of Petit Verdot. The wine is traditionally grown, with 10,000 plants per hectare. The harvest is made to 70% manually and up to 30% with a machine. The grapes are picked from their bunches and then easily scratched (foulage). The fermentation takes place at thermo tempered temperature in cement or steel tanks for between 8-10 days with mild stirring (remontage). The maceration lasts for about 3 weeks. The wine is then stored for 12 months in French oak barrels, of which one fourth is new each year.
