Château de Nages Héritage is made from 60% Grenache Blanc, 20% Clairette, 15% Roussanne & 5% Viognier that were organically grown. The harvest is done manually with immediate thinning of the grapes. The grapes are crushed and clarified easily before they are cooled for 5 days to simplify the static clarification (stabulation sur bourbes). The grapes are stirred daily (batonnage). The fermentation is done with natural yeast, the Roussanne and Bourboulenc grapes in old oak barrels and the Grenache and Clairette grapes on steel tanks. The storage is done on the lees – 50% in oak barrels and 50% in concrete tanks – for 8 months.
