JT from Château de Nages is produced from 95% Syrah & 5% Mourvèdre grapes grown organically. The harvest is done manually. 1/3 of the grapes are separated from their bunches (éraflage), 2/3 are vinified in whole bunches without the addition of sultites (SO2). The grapes are refrigerated for 5 days before fermentation, which takes place with natural yeast at 24 ° C with pumping of the wine at the bottom, up over the “wine cake” (délestage et remontage). The wine is stored in French oak barrels for a third of the volume and in concrete tanks for the remaining part for 12 months. The final wine is put together and bottled without filtration.
