JT from Château de Nages is made from typical Rhône grapes; 60% Roussanne, 20% Viognier & 20% Grenache Blanc grown organically. The grapes are harvested manually with sorting at the beginning of the ripening process and without the addition of gas. Fermentation with natural yeast in 500L barrels and storage with the bottom batch for 8 months. Composition, clarification and filtration as well as bottling in June the following year.
