Château de Valcombe – le soufre coupé is a fruity red wine made from 50% Syrah and 50% Grenache without added sulphites. The wine is grown on the hills overlooking the ponds of the Camargue. The soil has a, for the Costières de Nîmes, unique limestone layer that gives the wine an obvious freshness and minerality. The grapes are stalked immediately after harvest and then vinified in cement tanks without the addition of either yeast or sulfur. Fermentation is done at around 25-27 ° C temperature. Slow and repeated mixes (remontages). No malolactic fermentation. The wine is stored without added sulfur in cement tanks.
