Château d’Estoublon is a red wine made from 30% Grenache, 30% Syrah, 30% Mourvedre and 10% Cabernet Sauvignon. The harvest is done by hand in the beginning of September and the grapes are then removed from their bunches. Neither sulphites or yeast are added to the fermentation process which takes 25 days and implemented grape variety grape variety. The wine is stirred regularly (pigeage and remontage). The wine “cuvés” are then aged in oak barrels for 18 months and are then blended together – no filtering.
