The white “Trassegum” is made from Roussanne (68%), Rolle (16%) and
Viognier (16%). Harvesting is done at night time to protect the grapes from oxydation. The grapes are separated from the bunch to merely exploit the aromas from the fruit. Thereafter, follows a period of maceration before starting the fermentation process which takes place directly in oak barrels of 500 L.
