Cuvée Vieilles vignes from Château Fonsalade is made from 80 % Grenache- and 20 % Syrah grapes, “vieilles vignes”, which means older vines which produce high concentration grapes. The grapes macerate in concrete tanks for 4 weeks, of which 2 weeks to ferment at controlled temperature (17-20 ° C). The malolactic fermentation follows. The wine is then stored for 12 months on oak barrels before being bottled.
