The white Château Haut Selve is made from 60% Sauvignon Blanc, 10% Sauvignon gris and 30% Sémillon grapes. The grapes are harvested by hand and then coolmacerated for 12 to 18 hours. The grape juice is the coolclarified (débourbage) before the fermentation process begins. The finished wine is aged for six months in oak barrels, only half in new barrels, to obtain a round and smooth taste.

Chateau Haut Selve is a white wine from the Graves appellationen which has been stored in oak barrels. It has been made of Sauvignon Blanc, Sauvignon gris and Sémillon grapes. The wine has aromatic hints of cirtus fruit and exotic fruit with dominance of mango – good balance between acidity and fruitiness. Suitable for aperitif or with grilled fish.
