The Red Château Haut Selve is made of 60% Merlot and 40% Cabernet-Sauvignon grapes. The vines grow in clay and limestone soil and the grapes are harvested by hand when the grapes have reached a perfect maturity. The grapes are let to macerate for 3 weeks after the harvest and the fermentation then takes place at 30 ° temperature. The finished wine is aged in French oak barrels of which 1/3rd of the barrels are new. No chemical herbicides are used and the fertilization is organic.
