Château Kirwan is made from 68% Cabernet Sauvignon, 20% Merlot, 7% Cabernet Franc and 5% Petit Verdot. The grapes are harvested by hand. The fermentation takes 18-25 days including the malolactic fermentation. The assembly of the differents ” cuvées” starts in November and the result is every year unique in its kind. The storage of the final wine continues for 18 months in oak barrels, 40% of them are new.
