Chateau Kirwan is made from 50% Cabernet Sauvignon, 35% Merlot, 9% Cabernet Franc and 6% Petit Verdot. The grapes are harvested by hand. The fermentation takes 18-25 days including the malolactic fermentation. The assembly of the differents ” cuvées” starts in November and the result is every year unique in its kind. The storage of the final wine continues for 20 months in oak barrels, 40% of them are new.
