Château Paloumey is made from 55% Cabernet Sauvignon and 45% Merlot. The harvest is done manually and mechanically in late September and early October. Mechanical and manual sorting of the grapes, the latter on vibrating tables. The vinification is made with grapes from the same field area in 40-180 hl steel tanks. The grapes are macerated after the 20 to 26 days fermentation, followed by the malolactic fermentation, of which 30% is in new oak barrels. The storage takes place for 12 months, exclusively on oak barrels, of which one 1/3rd new barrels. Egg white clarification, no filtration.
