The red Château Simone is made from 45% Grenache, 30% Mourvèdre, 5% Cinsault, and 20% other grape varieties such as Syrah, Castets, Manosquins, Carignan and various Muscat varieties. The grapes are harvested by hand and sorted immediately before being loaded and carried away into baskets of 40 kg. Once in the cellar, the grapes are sorted again and removed from their clusters (egrappage). The grapes are lightly pressed so they crack (foulage). The vinification is done with natural yeast in small steel tanks for 15-21 days with stirring occasionally (remontage). The storage is done on oak – first in larger “foudre” for 8 months, then for 1 year on oak barrels of different ages. No filtration.
