Château Simone from the small Palette-appellation is one of the most famous and exclusive wines in Provence. The white wine is floral and fruity – easily oaked. A wine to serve now or to put in the cellar for some years !

The white Château Simone is made from 80% Clairette, 10% Grenache Blanc, 6% Ugni Blanc, 2% Bourboulenc and 2% Muscat Blanc. The grapes are harvested by hand and sorted immediately before being transferred in 40 kg baskets. In the cellar, the grapes are sorted again. The grapes are then lightly pressed so they burst (foulage) and are then let to drip (égouttage) to create the “moût de goutte”. This, before pressing the rest of the grapes which gives the “vin de presse”. The rest after the press is then broken down and is mixed into the wine for a new press (rebêchage). A partial clarification is done (débourbage) before the fermentation. The final wine is stored on oak – first in larger “foudre” for 6 months on the lies of the wine, then for 1 year on oak barrels.
