Chevalier Torpez – Ultimum – Rosé wine is made from 40% Grenache, 25% Mourvèdre, 15% Tibouren and 5% Syrah. The grapes are harvested manually in boxes and partially de-stemmed. A cold maceration before fermentation takes place at 5°C for 8 to 10 days. The temperature is then raised and the fermentation lasts between 3 to 4 weeks at 20°C-25°C temperature. The wine is then stored on fine lees and stirred regularly with the help of scrapers that turn up the sediment (batonnage). The lees on the bottom release aromas, which give volume and “fatness”. The wine is aged in oak barrels for more than 18 months.
