Ultimum from Chevalier Torpez is made from 100% Rolle. The grapes are harvested manually in small boxes, partially de-stemmed. The grapes are cool macerated at 5°C for 8 to 10 days. The must is then fermented for 3-4 weeks, at a temperature of 20°C – 25°C. The wine is produced according to the traditional method with regular processing (remontage & delestage). Daily tastings are done to control and optimize the extraction. The wine is stored on its lees under regular stirring (batonnage) and mixes the lees with the help of scrapers that scrape the bottom of the tank. These lees release aromas that give volume and fatness in the mouth. Aged in oak barrels for more than 18 months.
