Clos Ornasca – Stella is a Corsican red wine made from Sciaccarellu grapes. The wine is composed of the best wines from the winery. The finalized wine is stored for 1 year in oak barrels before being bottled. The grapes are picked at ideal ripeness. The fermentation then takes place with daily pumping of the bottom wine to the top of the tank (remontage), and 2 drains of the tank (delestage). Both technologies aim to extract phenolic components. The fermentation is done at 26-28 ° C and lasts for 10-20 days.
