Cottanera – Calderara – Etna Bianco – White wine is made from 100% Carricante grapes. grown in the Etna Doc Bianco Castiglione di Sicilia appellation, 750 m above sea level. The grapes are picked by hand in small baskets and are then coolmacerated for about 24 hours. 40% of the grapes ferment in French oak barrels and the other 60% in cement tanks. The storage is done in the same distribution; 40% is stored in oak barrels for one year, while the other 60% is stored in cement tanks. Approximately 5,500 bottles are produced.
