San Placido from Cuppari is a Faro from the extreme northeastern part of Sicily. The wine is made from Nerello Mascalese, Cappuccio and Nocera. The grapes are harvested as from the end of August in different stages depending on the grape variety, however with Nerello Mascalesen as the last . The fermentation takes place with selected yeast variants and the storage is done in 500 liters of chestnut and oak barrels for up to 18 months. The clarification and a light filtering follow as well as a very limited sulphite supplement. The wine is then bottled and stored for at least another 3 months time.
