Cubìa from Cusumano is made from 100% Insolia grapes harvested by hand the first 10 days of September and then macerated with the peel in low temperature. The fermentation takes place in 20 HL barrels and the wine is then stored on its lees for 6 months. The finished wine is aged slightly further after having been bottled.
