Noà from Cusumano is made of Nero d’Avola-, Merlot- and Cabernet Sauvignon grapes. The wine is grown in sun-exposed vineyards, 250 m above sea level in the town of Alcamo located west of Palermo. The soil is calcareous and compact. The harvest is done manually in early September. The fermentation takes place at controlled temperature (28-30 °) for 10-15 days. The malolactic fermentation is then done in oak barrels and the finished wine is aged for a year in the same barrels before being bottled.
