“Patrimoine” means heritage in French and is the name of this Côtes-du-Roussillon-Villages from Domaine Boudau, made from 60% Grenache, 30% Syrah and 10% Carignan. The grapes are harvested by hand, thinned and picked from their bunches. Thereafter, they’re fermented according to the traditional method. The wine is regularly stirred (pigeage). The fermentation takes 21 days for the Syrah, 18 days for the Grenache and 14 days for the Carignan. The wine is then aged on its lees for 6 months. Only the Syrah undergoes the malolactic fermentation. A frequent award-winning Roussillon wine.
