Blanc sec Premières Côtes is made of Sauvignon, Mauzac and Muscadelle grapes. Each grape variety is processed and “vinified” separately. The grapes are pressed after harvest and are left to macerate for some time before starting the fermentation. The Fermentation lasts for 10 days at low temperature, around 16-18 °. The different wines, or “cuvees” are then mixed and may be stored for a shorter period in steel tanks before being bottled.
