The wine production and storage of the wines are mainly done in temperature controlled stainless steel tanks, which makes it possible to mix modern technology and traditional methods. Chablis Vieilles vigne is partially vinified on oak barrels (of which 5% new barrels) and is stored 12 months on its lees with regular stirring (batonnage).
