Domaine de la Viaudière – Paradisio – Pierre Blanche – White wine is made from 100% Chenin grapes. The grapes are harvested slightly overripe by hand in October, before the noble rot has attacked the grapes. The grapes are then lightly pressed before starting the fermentation process – first the alcoholic fermentation, then the malolactic. The wine is then let to mature with its lees for 11 months in French oak barrels. The wine is filtered and then bottled.
