Collet de Bovis is produced by the typical Bellet grape variety “La Folle Noire”, Braquet, Cinsault and Grenache. The harvest is made by hand around the 20th of September, the Grenache and Braquet a week before the Cinsault and the Folle. The fermentation then takes place directly in oak barrels for 3 weeks. The finished wine then matures in oak barrels for another 18 months before being bottled.

Collet de Bovis is an organic red wine from the exclusive micro appellationen Bellet on the hills around the city of Nice. The wine is powerful with hints of red fruit – a perfect balance and with soft tannins. To be drunk to a lamb steak with a gratin dauphinois.
