Domaine Fontaine du Clos – Vacqueyras– Castillon – Red wine from the southern Rhône valley, made from Grenache and Syrah grapes, harvested by hand. The grapes are removed from the bunches and then crushed before being placed in steel tanks for fermentation for a fairly long period of about 21 days. Two daily pumps (remontages) allow the must and press residues to be mixed. This gives more color, texture and aromas to the wine. The finalized, fermented wine is stored for a year in barrels, which rounds off the tannins and develops the aromas of spices and vanilla.
