The red Cuvée Clarendon is made of 80% Syrah- and 20% Cabernet Sauvignon grapes. The grapes were harvested between the 18th and 23rd of September and were then macerated for 20 days before starting the fermentation at 28 ° C. The wine is “turned” (remontage) twice a day. This implies that the grape juice in the bottom of the steel tank is liften up to the surface during the fermentation in order to increase the oxygen supply. The finished wine was stored for 26 months in steel tanks.
