The Rosé wine “Tradition” is produced from Cinsault, Carignan, Syrah and the white grape variety called Rolle. The grapes are macerated for 3-6 hours after the harvest and then squeezed. The colored juice is extracted from the macerated grapes (saignée) and is then mixed with the brighter grape juice from the first press. The wine is fermented for 15 days at 17 ° C. The wine from the different wine varieties is then filtered, before they are all mixed together into the finalized wine. The wine is aged in steel tanks and bottled when needed throughout the year.
