Champagne Louis Brochet – Extra Brut – 1er Cru is assembled in the same manner as the generic “brut 1er Cru”-version. The technical difference between the two wines is that no added sugar has been added to the “Extra Brut” variety at the end of the fermentation process, when the remaining yeast at the top of the bottle is removed and replaced with new wine. The “Extra Brut” is a wine for those who like really dry wines. The wine is also completely natural, since no sugar has been added.
