“Les Cinsomniaques” is an organic natural wine made from just Cinsault without additives and without sulfites. A rather wine with fruity and a little crunchy palate. Soft and silky, to serve lightly chilled to any food – preferably a plate of cheese and cured meat !

Presentation vineyard

<p>Domaine Sainte Eulalie is located just north of Hyères on the French riviera, at the foot of the Maures mountain massif. The vineyard, which was initially planned to become a golf course, was taken over by Jean-Louis de David-Beauregard after finishing his wine studies in Hyères. Jean-Louis planted 11.5 hectares only in 2000 and then another 5.5 hectares in 2002 to increase the production to 17 hectares under the Côtes-de-Provence appellation. The winery cultivates the for Provence very typical Syrah, Grenache and Mourvedre varieties. The agriculture is organically conducted with ambition to intervene as little as possible to the natural process. Only natural yeast is used and the wine tanks are small to easily process the various grape varieties as well as the mixture of the final wine. 60% of the production is red wine and the rest is rosé.</p>

Sommelier's advice

<p>A light red color in bright gamay style. The aroma is fruity and generous, predominantly from red berries. The palate is round and juicy, light but in the same time concentrated with some sweet character. A lovely, slightly different red wine that only has the disadvantage of the bottle running out too soon! To pair with lighter meals, preferably cold, such as a cheese and cured meat.</p>

“Les Cinsomniaques” from Domaine Sainte Eulalie is made from 100% cinsault. The wine is produced with natural yeast and without additives of sulfites. No filtering, which means that a light precipitate can be left in the bottom of the bottle. Only around 2,000 bottles are produced per year.
