Côtes-du-Rhône Villages from Vidal-Fleury is made from 50% Grenache-, 30% Syrah-, 10% Mouvèdre and 10% Carignan grapes. The vines grow in calcareous stony soil in the southern part of the Côtes-du-Rhône district. The fermentation is conducted separately per grape variety at 30 ° C. Several “délestage” are conducted – the grape juice is tapped from the bottom of the steel tank and then pumped back on top of the remaining grape juice peel (chapeau de marc). The alcohol fermentation is followed up by the malolactic fermentation. The wine is then stored on its lees for 10 months in both steel tanks and in oak barrels. The wine is then filtered, bottled and may be stored for another 4 months.
