Côtes-du-Rhône from Vidal-Fleury is made of 75% Viognier, 15% Grenache Blanc and 10% other varietals. The grapes are harvested manually and by machine at the end of August. 30% of the grapes are macerated with its peel, 70% are pressed immediately using hydraulic press. The must is macerated at 12 ° C temperature. The fermentation takes place at 18 ° C – no malolactic fermentation. The wine is then matured on its lees for 1 year with regular stirring. Filtered and bottled, the wine is then stored another 3 months.
