Saint-Joseph from Vidal-Fleury is made from 100% Syrah grapes. The grapes are harvested manually in late September. The fermentation then takes place at 30 ° C. Several “délestage” are conducted – the grape juice is tapped from the bottom of the steel tank and then pumped back on top of the remaining grape juice peel (chapeau de marc). This is followed by the malolactic fermentation. The wine is stored on its lees for 3 months in steel tanks and then another 12 months in oak barrels. The wine is then filtered, bottled and may be stored another 4 months.
