La Fuga from Donnafugata is produced from 100% Chardonnay grapes. The grapes are grown in the southwestern part of Sicily in the hilly landscape with mineral-clay soil. The grapes are harvested in mid-August and are immediately pressed. They are then let to ferment at 14-16 ° C controlled temperature. The finalized wine is stored in steel tanks on its lees before being bottled and may then be stored for at least another 3 months.
