Passo delle Mule from Duca di Salaparuta is a red wine made from 100% Nero d’avola grapes. The grapes grow in siliceous clay soil, 290-340 meters above sea level in the central / southern part of Sicily. The grapes are harvested by hand the second part of September and are then vinified and fermented according to the classic method for 8 days at 28-30 ° C. The wine is then transferred into oak casks where it’s stored for 10 months. The finalized wine is bottled and stored further 6-8 months before sale.
