Famille Laplace – Le vilain petit canard – White wine is made from 90% Gros Manseng and 10% Petit Manseng. The grapes are pressed in the pneumatic press as soon as they arrive in the cellar after the harvest. The must then cool macerates for 48 hours before clarification (debourbage) where solid particles are removed. Fermentation takes place under controlled temperature. Stirring is carried out systematically (batonnage). After vinification, the wine is aged for 4 months in steel tanks.
