Firriato – Cavanera -Ripa di Scorciavacca – Etna bianco – White wine is produced from Carricante and a small part of Catarratto grapes grown in Castiglione di Sicilia, or more precisely in Contrada Verzella on the northern part of Etna, 650-730 m above sea level. The grapes are harvested by hand in October in small baskets. The grapes are lightly pressed and fermented for 20 days at a controlled temperature. The wine is then aged for at least 6 months on the lees, with daily stirring, before it is bottled. Another one year of storage in the bottle.
