i Soli Pigato from Foresti is a dry but soft white wine made from 100% Pigato grapes. This wine originates from the southern part of the Valle d’Arroscia, just north of the seaside towns of Imperia and Savona. The grapes for i Soli grow in the municipalities Camporosso, Bordighera, Cipressa, Diano San Pietro and Ranzo. The grapes are macerated with the skin for 12 hours after the harvest and are then fermented at 18 ° C with yeast extracted from the winery’s own grapes. The malolactic fermentation follows, then the clarification and finally the stabilization. The wine is stored for 5 months in steel tanks, of which 3 months on the lees.
